Southwestern Salad


4 cups shredded lettuce
1 can black beans, drained
1 can corn, drained
1 package precooked chicken strips
½ – ¾ cup Colby-Jack cheese, shredded (fat free cheese for dieters!)
1 tomato, chopped
½ red onion, chopped fine
¾ cup of your favorite salsa
¾ cup sour cream (fat free sour cream for dieters!)
Tortilla Strips (Substitution idea: crumbled tortilla chips)


Dressing: Combine Sour cream and salsa, set aside.

Salad: Combine lettuce, beans, corn, chicken, cheese, tomato, and onion. Toss with dressing. Garnish with tortilla strips. Serves 4-6 dinner size salads.

My family loves this salad, and if you use fat free or low fat sour cream and cheese, it’s a great idea for those people who are trying to lose weight or watch their figures.

Hero Sandwiches


Your favorite deli meats
Deli Rolls
Lettuce, Tomatoes, Sprouts, Onions

Mayo or mustard
Assemble sandwiches as desired.

This one’s a no-brainer, but it’s a much favored dish with my husband and kids. In fact, the kids love that they get to make their own sandwiches. It’s also a great idea for Monday night football fans!

Chicken Salad Sandwiches


Croissants or dollar rolls from your local deli
16 oz Packaged, precooked chicken (Tyson makes one which is packaged like tuna, very convenient!)
¾ cup Mayo (fat free for dieters!)
1 stalk celery, chopped fine
1/3 red onion, chopped fine
1 tomato, chopped fine and deseeded
½ red bell pepper, chopped fine
Salt & Pepper to taste


Combine chicken, mayo, celery, onion, tomato, and bell pepper in bowl. Add salt and pepper to taste. Serve on croissants or dollar rolls. Garnish with parsley if desired.
This is a great alternative to tuna salad and tastes amazing. My kids eat it like it’s going out of style and my husband always claims the leftovers for his lunch the next day!

Seafood Dip (YUM!)


1 package imitation crab meat, chopped fine
½ cup mayo
¼ cup sour cream
1 small package of frozen peas, thawed
¼ cup chopped chives or green onions
1 small red bell pepper, chopped fine
Crackers or Melba toast


Combine imitation crab meat, mayo, sour cream, peas, chives, and peppers in a bowl. Serve with crackers or Melba toast for dipping.
This recipe is one that I use for parties. It is always popular and everyone asks for the recipe. It’s an easy to make, simple dish that impresses my guests!

Pistachio Encrusted Tuna Steaks

1T shallot (thinly sliced)1 bay leaf 3T reduced or low fat sour cream 2t fresh dill (chopped) 1/2 lemon (juice only) 1/2c white wine (cooking wine is fine) 1t whole grain mustard 1/4c dry breadcrumbs1/2 t salt1t extra virgin olive oil1/4c pistachios (shelled) 4 four oz tuna steaks

Get a large sauce pan and combine shallot, bay leaf and wine to a boil. Reduce flame and cook uncovered until the wine had been reduced (about 5 minutes). Remove from flame, remove bay leaf and transfer to separate bowl. Add lemon juice, 1t dill, mustard, 1/4t of salt and dill. Combine all ingredients. Put to side to use as sauce when Tuna is cooked.

In a food processor, combine breadcrumbs, pistachios, 1t dill and 1/4t salt. Blend until ingredients are reduced to a fine quality. Transfer mixture to a separate bowl. Coat each Tuna steak with this mixture. Once each steak has been dredged, heat oil in a large skillet and cook Tuna to medium rare (about 5 minutes on each side). When they are done, pour small amount of sauce on each steak and serve.

Sounds like you should be headed to the fat farm after you eat this, but each steak has a little over 225 calories. This entrée is loaded with protein, but very low in carbs. This is the best of both worlds, great food and very healthy. You probably didn’t eat this good when you were eating whatever you wanted!

Perfected Recipe Tips For Excellent Sauce

The recipe is fairly simple to follow and easy to make and always receives great praise.
You could buy Alfredo Sauce in a bottle in a store but it’s much more fun to try yourself and
perfect you own version.

The basic Alfredo Sauce Recipe is a heated mix of butter, cream and Parmesan cheese. From this basic
recipe, many variations have arisen and optional seasonings added according to the taste of the cook.
Alfredo Sauce is also quite versatile and is especially good when used in Shrimp Alfredo Recipes as
well as over vegetables or left over chicken with sauted mushrooms.

As with most things in life, better quality ingredients will give a better result. Try to use the real cheese,
authentic Parmigiano Reggiano is ideal but ordinary Parmesan will do fine. The Fettuccini should ideally
be fresh (this cooks in about 2 minutes) but if you buy dry Fettuccine then try to get the thinnest available.

My authentic recipe below includes chicken and it goes so wonderfully with the Alfredo Sauce. It’s one of my
favourite ways to serve chicken with pasta. I have tried to keep this recipe simple with as few variations
as possible. I love garlic so I just couldn’t leave it out but you can if you prefer. There are some cooking
tips below the basic recipe that are worth considering before you start cooking.

  • 3 skinless chicken breasts
  • 2 Tbs olive oil
  • 2 tsp crushed garlic (optional for sauteing chicken)
  • 4 Tbs butter
  • 1 cup heavy cream
  • 1 cup grated Parmesan (Parmigiano Reggiano)
  • 8 oz Fettucine Pasta (or enough to feed 4 people)
  • salt to your taste
  • a little ground black pepper to bring out the taste
  • a little sugar to taste
  • dash of nutmeg (the secret to good Alfredo Sauce)

Cooking Instructions

The Fettucine

You first need to cook your pasta and I’m assuming that you know how to do so, so just follow the instructions on the fettuccini packet. When the fettuccine is cooked, drain it and set it aside.

The Alfredo Sauce

Melt the butter over a low heat in a pot that will be large enough to hold the pasta at the end of the cooking. Do not let it boil, just melted and warm is fine.

Slowly add the cream and stir with a spoon until it is hot but not boiling and has reduced slightly.

Now add the Parmesan cheese a little at a time and stir until it is all melted. The sauce may take quite a while to thicken, keep stirring and don’t let it boil. Add the seasonings (including the sugar) according to your taste. If the parmesan is grated too course it will not melt in well. Grate the cheese as fine as possible for best results. The sauce can take a long time to reduce. Don’t be tempted to add flour or cornstarch for thickening as it does alter the flavour.

The Chicken

While the Fettucine is cooking you can prepare the chicken breasts. Heat the olive oil in a frying pan and saute the chicken and garlic until the chicken juice runs clear and the chicken is done.

Once the Alfredo sauce is done, stir in the cooked chicken and then add the cooked pasta to the Alfredo and chicken.

Other Alfredo Sauce Ideas and Tips

  • The basic Alfredo Sauce is very nice over vegetables like broccoli cauliflower and beans.
  • Some cooks like to thicken the sauce by adding a 1/2 package of cream cheese. Try to avoid thickening with flour or cornstarch, it does spoil the flavour. You can also try adding more parmesan and cooking it for a little bit longer. Here I’ve discovered that patience is the key to success. If you hurry the sauce, you won’t get the same results.
  • Unsalted buttermakes a huge difference to the flavour. Using salted butter with the strong flavour of the parmesan can result in over-salty sauce and be unpleasant to eat.
  • Now Nutmeg might seem like a strange addition but it does make a huge difference in the wow factor and in my opinion it’s the secret ingredient.
  • For something different saute bacon and mushrooms with crushed garlic and serve it with the Chicken and Alfredo sauce.
