Four No Cook Recipes For Fall

Fall is approaching, and for some cooks, that means firing up the old oven. This year, try something a little different and skip the hot stove. Here are four great no-cook recipes that will be sure to put smiles on your family’s faces!

Southwestern Salad

Ingredients

4 cups shredded lettuce
1 can black beans, drained
1 can corn, drained
1 package precooked chicken strips
½ – ¾ cup Colby-Jack cheese, shredded (fat free cheese for dieters!)
1 tomato, chopped
½ red onion, chopped fine
¾ cup of your favorite salsa
¾ cup sour cream (fat free sour cream for dieters!)
Tortilla Strips (Substitution idea: crumbled tortilla chips)

Preparation

Dressing: Combine Sour cream and salsa, set aside.

Salad: Combine lettuce, beans, corn, chicken, cheese, tomato, and onion. Toss with dressing. Garnish with tortilla strips. Serves 4-6 dinner size salads.

My family loves this salad, and if you use fat free or low fat sour cream and cheese, it’s a great idea for those people who are trying to lose weight or watch their figures.

Hero Sandwiches

Ingredients

Your favorite deli meats
Deli Rolls
Lettuce, Tomatoes, Sprouts, Onions
Cheese slices
Mayo or mustard
Preparation
Assemble sandwiches as desired.

This one’s a no-brainer, but it’s a much favored dish with my husband and kids. In fact, the kids love that they get to make their own sandwiches. It’s also a great idea for Monday night football fans!

Chicken Salad Sandwiches

Ingredients

Croissants or dollar rolls from your local deli
16 oz Packaged, precooked chicken (Tyson makes one which is packaged like tuna, very convenient!)
¾ cup Mayo (fat free for dieters!)
1 stalk celery, chopped fine
1/3 red onion, chopped fine
1 tomato, chopped fine and deseeded
½ red bell pepper, chopped fine
Salt & Pepper to taste

Preparation

Combine chicken, mayo, celery, onion, tomato, and bell pepper in bowl. Add salt and pepper to taste. Serve on croissants or dollar rolls. Garnish with parsley if desired.
This is a great alternative to tuna salad and tastes amazing. My kids eat it like it’s going out of style and my husband always claims the leftovers for his lunch the next day!

Seafood Dip (YUM!)

Ingredients

1 package imitation crab meat, chopped fine
½ cup mayo
¼ cup sour cream
1 small package of frozen peas, thawed
¼ cup chopped chives or green onions
1 small red bell pepper, chopped fine
Crackers or Melba toast

Preparation

Combine imitation crab meat, mayo, sour cream, peas, chives, and peppers in a bowl. Serve with crackers or Melba toast for dipping.
